How to Stay Full and Satisfied on a Plant-Based Diet

Several years ago, I transitioned to a plant-based lifestyle. The variety of plant-based foods I was consuming didn’t go unnoticed. My plate became the focus of many interesting conversations.

One evening, my niece and I sat down for dinner and had an entertaining exchange:

My Niece: Auntie Robin, what is that?

Me: Roasted vegetables over millet. The seasoning is fantastic. This meal turned out better than I thought.

My Niece: Sigh. (as she rolls her eyes) You’re funny, Auntie Robin. Your plate looks like the produce department, colorful and gross.

Plant-based food doesn’t have to be boring.

Many people, including my niece, wonder how to make plants taste good.

Isn’t broccoli boring? How do you make green leafy vegetables delectable? Why do most vegetables appear as large beige heaps on my plate?

Flavorful, mouthwatering, plant-based dishes aren’t an oxymoron.

Mother Nature didn’t envision plants as tasteless. Plant-based foods have the potential to be mouthwatering and mind-blowing.
